  1. Season chicken thighs with a pinch of cumin, salt, and paprika
  2. Fry the chicken in a pan until golden brown. Remove and set aside.

Check every once and while until most of the excess water is gone and rice is tender. Add shredded fried chicken, peas, carrots, and peppers to the rice when almost done. Remove from heat and allow to cool.
  7. Optionally: Serve with some sliced green onions as garnish.
