  11. Prepare 3,4 eggplants small sized
  12. Prepare 1 tspoon cumin seeds

The difference comes from the spice mixture added to the rice dish. Vangi is the Kannada and Maharashtrian word for Eggplant (aubergine or brinjal) and bath is rice. There are many variations of recipes, some add cooked rice to the stir fried eggplant. To make the rice: Wash the rice well and place in pressure cooker.

Steps to make Vangi bhat(eggplant rice):
  1. Soak rice in water for 30 minutes.dry roast peanuts and sesame seeds separately.blend them together to make fine powder.

  2. Ghati masala is important in this dish.now in bowl take peanuts and sesame seeds powder,add turmeric powder, Red chilly powder,salt,ghati masala.mix well,stuff masala in eggplant to the fullest.
  3. Now take deep pan add oil to it, add cumin seeds.add sliced onions to this saute.add turmeric powder and remaining mixture of masala in rice
  4. Mix well add sufficient water to it allow it to cook. Once 60 percent rice is done put eggplants upside-down in rice.
  5. Cook for 20 minutes on low flame, eggplant and rice should be cooked properly.it may take ten more minutes.
  6. Once it is cooked properly. Serve hot.it is always paired with dahi raita as it's spicy preparation.but it tastes yum.usually it is prepared after festival to change taste.hot spicy rice with cool raita is heavenly combination.do try this.

There are many variations of recipes, some add cooked rice to the stir fried eggplant. To make the rice: Wash the rice well and place in pressure cooker. Turn off the heat and let the pressure reduce naturally. Remove the lid and fluff the rice with a fork. There is nothing exotic and no airs about this dish but it has appealed to my palette for as long as I remember.
