- Remove it from hot water and transfer this into a bowl filled with cold water, soak for 2 - 3 minutes.
- Transfer this into a blender, add coriander, green chilli and blend it into a smooth puree.
- Take a skillet, add capsicum, tomato, cauliflower, peas and salt, mix well and cook for 5 - 7 minutes on medium heat.
- Heat 1 tbsp butter in a skillet, add cumin, ginger paste, garlic paste and stir for 1 -2 minutes.
- Then, add onions and fry till translucent or until it turns golden brown in color.
- Now, add the boiled veggies, potatoes, chilli powder and garam masala powder, mix it well.
- Cook for 5 minutes on medium heat, then add the blended spinach puree and mix it well.
- Mash the mixture with the help of a food masher.
- Cook for 3-4 minutes more and add lemon juice and mix it again.
- Add 1 tbsp butter again and switch off the flame.
- Heat 1 tbsp butter in a pan, add 1 tsp coriander, 1/2 tsp garam masala, 1/3 tsp chilli powder and chat masala, stir well and toast the pav buns on it for 2 - 3 minutes.
- Garnish pav bhaji with onion rings, lemon wedges, butter and coriander leaves, serve hot.
