These simple lamb kebabs are cooked in the oven and are a great fuss-free way to feed a crowd. Serve in flatbreads with salad and the mint sauce. While seekh kebab is best made and eaten fresh, the raw mix can be prepared in advance and frozen. When you are ready to eat, just thaw to room temperature and cook as instructed.

Steps to make Seekh kabab:
  1. Wash and strain all the water from the mince and pat it dry. It should be free from moisture.
  2. Now also strain all the water from the onion grated. Also the ginger garlic paste should be free of water. I have kept it on a sieve to drain it's water. Then used it.
  3. Grate the garlic and it into the mince with onion squeezed water off ginger garlic paste, green chilli paste, black pepper powder, dhaniya powder, zeera powder,red chilli flakes and maida roasted and mix it nicely so tat all the things are incorporated into each other. Nowtake a burnt charcoal and on a foil put it in between the mince and add few drops of oil /ghee and cover it up so that it absorbs the flavour of BBQ.
  4. Afterwards prepare a seekh with the skewers tie at least 6 wooden skewers together and wrap a foil paper so that easily we could apply the meat on the seekh and remove.
  5. Lastly fry them on low flame with in very less oil on a pan here we go. Can be taken with pav or parathas with salad of your choice and chutneys.
