  3. In large sauce pan, over medium heat melt butter. Add onions & bell peppers and saute until soft. Stir in garlic and saute 1-2 more minutes until fragrant. Be careful to not burn it. Stir in cream of mushroom soup, and using same can measure out heavy cream and add to pan. Add in cubed cheese (about 1/3 of a 2 pound block of velveeta cheese). Stir till cheese is almost melted.
  4. In a large bowl mix together cheese soup mixture with rice, broccoli & quinoa.
  5. Pour mixture into a 13x9 baking dish sprayed with non-stick spray. Bake for about 20 minutes or until heated through and starting to brown on top.
