Steps to make Gareth’s Shakshuka:
- In a little olive oil, fry the pork sausages for 10 minutes on a medium heat. Once cooked, remove from the pan and set aside.
- Add the mushrooms and fry until golden brown. Add the chopped leek and garlic and cook until the spinach is wilted.
- Add the tinned tomatoes and harissa paste.
- Add the cannellini beans then stir and cook for a minute.
- Add the pork bangers back into the pan to further cook in the sauce.
- Making a little well with a large spoon into the shakshuka for each egg, crack the egg into the open space. Season with salt and pepper.
- Turn off the heat and place the pan (using a pan that has a stainless steel handle) into a preheated oven at 180 degrees C. For 2-5 minutes to cook the eggs. Remove from the oven and serve hot with toasted bread.
