Reduce heat to low-medium and then use an immersion blender to puree soup to desired consistency. Add all of the chicken broth, white wine, cannellini beans and the oregano and thyme. Stir well and bring to a boil. Add the kale, onion, and apples to the saucepan. Season with salt, pepper, and optionally curry according to taste.
