It's been hanging around for months and I finally decided to try it. I can't lie, everything turned out tender and delicious. Like most things, it just requires some patience. The good news is, it's in the oven and there is no hovering around it.

Steps to make Clay Pot Ribs:
  1. In a massive bowl, soak clay pot for a minimum of 30 minutes. Prepare your ribs by patting them dry with paper towel. Remove the membrane from the back side of the ribs using the handle from a spoon.
  2. Prepare a spice rub. Pre-made or of your own choosing. Rub it all over the ribs. Front, back and sides. Set aside.
  3. Prep veggies. I recommend large chunks and slices as this will be in the oven for a prolonged period of time. Season the potatoes with turmeric as well as herbs and spices.
  4. Place potatoes in the bottom of the pot. Begin to layer the vegetables, seasoning lightly with each layer.
  5. Place the ribs on top of the bed of vegetables. Add any of the remaining spice rub that fell off into the vegetables. Cover. Place into a cold oven and set the temperature for 275 F. For 3.5 hours.
  6. When there is 30 minutes remaining on the ribs, begin to assemble the sauce. Add ingredients to a pot, mix well and simmer for roughly ten minutes.

  7. Plate and serve.

Like most things, it just requires some patience. The good news is, it's in the oven and there is no hovering around it. Just let it handle it's business. After the ribs have been sitting in the mixing bowl place into the clay pot and place the clay pot onto of the stove top, turn it to medium high heat. Put the lid on so it can steam properly.
