Leche flan is perfect by itself, but it can be served in many other ways. It is a popular topping for iced desserts in the Philippines like maiz con hielo and halo-halo.

The ingredients needed to make Leche Flan:
  1. Prepare 7 Egg yokes
  2. Get 1 Whole egg
  3. Get 1 can Condensed milk
  4. Take 1 can Evaporated milk
  5. Make ready 1 cup Water
  6. Get 1 cup Sugar
  7. Take 1 tsp Vanilla

It has been a regular item in the menu of most restaurants because of its taste, ease in preparation and long shelf life. It can also be added as a component to build other great tasting dessert creations. Combine sugar and water in a saucepan over medium heat. Spread caramel evenly over the inside of a flan mold, tilting the mold to make sure the whole surface is covered.

Instructions to make Leche Flan:
  1. In a sauce pan cobine water and sugar in a medium heat. When it starts to boil stir occasionally until sugar turns to caramel. Transfer the caramel into flans while its hot it turns into rock hard when it cools. Note: never taste the caramel it so hot and that it can burn you.
  2. Whisk eggs, condensed milk and evaporated milk until it is well incorporated. Do not over whisk. Lastly add the vanilla.
  3. Run the mixture into a sieve while transferring into flan/ pans.
  4. Steam for about 30 mins or so depending on its thickness. You know when its done when its more gelatinous state when you slightly shake it.

Combine evaporated milk, condensed milk, egg yolks, and vanilla extract in a large bowl. Leche flan is traditionally steamed in the Philippines (where ovens were uncommon for many years), but baking it in a water bath is a great alternative if you don't have a steamer.
