  3. Preheat the oven to 400F or 200C under fan force for 10mins. - Toast for 1 hour - then turn down to 340F or 170C for another 15mins. - Baste half way through the toasting time.
  4. Take the chicken out to a toast pan, baste again and cover with foil. - Turn off the oven. Put the covered chicken in the oven again and leave to rest for 10min before serving.

Mix thoroughly with a spoon or fork. To prepare the chicken- bring to room temperature and dry thoroughly. Salt and pepper the bird all over. Using your hands, smear the bird all over with the garlic herb butter. Crush the head of garlic with your hand to separate the cloves.
