The ingredients needed to make Chili jam:
  1. Prepare 10 dried red chillies
  2. Prepare 10 dried shrimps (optional)
  3. Make ready 8 cloves garlic
  4. Prepare 6 shallots
  5. Prepare 3 tbs palm sugar
  6. Take 1 tsp sea salt flakes
  7. Prepare 3 tbs vegetable oil

Add the tomatoes and blitz until you have a smooth mixture. Transfer to a large saucepan over a medium heat. Stir in the sugar, Thai fish sauce, balsamic vinegar and red wine vinegar. Bring to the boil, stirring regularly, then reduce.

Steps to make Chili jam:
  1. Soak the dried chillies until they are soft
  2. Grill the garlic and shallots in the oven at Grill mode 240 C for 5-8 min until they are slightly burnt
  3. Crush and grind the dried shrimps until they turn to coarse powder then remove from the mortar to rest
  4. Chop the soaked chillies and grind them in the mortar
  5. Peel skins off the grilled garlic and shallots then mix them with the chillies in the mortar
  6. Return the shrimps into mortar, crush and grind the mixture until they turn into a paste
  7. Add the vegetable oil in the heated saucepan
  8. Stir fry the paste for 5 min then add palm sugar
  9. Keep stir-frying the paste for 10-15 min until it is caramelised, add some water if it’s too sticky.
  10. Remove from heat and leave to rest

Stir in the sugar, Thai fish sauce, balsamic vinegar and red wine vinegar. Bring to the boil, stirring regularly, then reduce. It's a very simple savoury jam, as you would imagine, and is great on burgers or grilled chicken. M any chilli jam recipes call for peppers, or ginger, or garlic, or tomatoes, or … well, you name it. But all you really need is sugar, chillies (obviously), vinegar and a source of pectin.
