The ingredients needed to make Chicken Stew:
  1. Take 300 gms Chicken
  2. Prepare Red/Green Chilli 2 chopped diagonal
  3. Take 1 Small Tomato finely chopped
  4. Make ready 1 Small Onion thinly sliced
  5. Prepare 1 tsp Chilli flakes
  6. Take 4-5 Garlic cloves finely chopped
  7. Prepare 1 inch Ginger finely chopped
  8. Make ready 4-5 French Beans cut into diagonal
  9. Take 1/4 cup Capsicum cut into cubes
  10. Take 1 Carrot cut into big chunks desired shape
  11. Get 1 tsp Sichuan Peppercorns dry roasted and coarsely crush
  12. Make ready 2 tsp Rice flour (if not you can use corn flour)
  13. Make ready 2 tbsp Spring onionchopped diagonal
  14. Make ready As needed coriander leaves chopped
  15. Make ready to taste Salt
  16. Make ready Water as required

Add the chicken and bring to the boil. Heat oil in a heavy pan over high heat and fry chicken until lightly golden. Add onion, celery, carrots and garlic. Move them around the pan before adding the wine.

Instructions to make Chicken Stew:
  1. Take the chicken in a pan. Add the thinly sliced onion, salt, tomato, chilli flakes and saute it in a low heat. Cover the pan with lid and let the chicken cook in it's own juice for around 5 mins.
  2. Now pour enough water and continue to cook for another 10-15 mins. Cooking time depends upon the chicken you are using.
  3. Add the chillies, chopped ginger, garlic, carrot, beans and capsicums. Let it cook for 2-3 mins.
  4. Now mix the rice flour in some water and pour into the chicken. Stir continously for around 2 mins to prevent from forming lumps.
  5. Add the spring onion, coriander leaves and coarsely crushed sichuan pepper. Give a quick stir and take off the heat.

Add onion, celery, carrots and garlic. Move them around the pan before adding the wine. Turn down the heat, add the tomatoes, tomato puree, salt and pepper. Put the chicken, skin-side down, in a large non-stick frying pan on a medium heat, cook until the skin browns, then turn and brown the other side. You shouldn't need any oil but if the skin starts to stick, add a little.
