The ingredients needed to make Spanish Paella:
  1. Make ready 1 cup Prawns, chicken thighs, chorizo, clams
  2. Make ready 2 tbsp Salt, pepper, paprika, oregano, saffron
  3. Prepare 1 can Whole crush tomatoes
  4. Make ready 1 cup Sweet peas
  5. Prepare 1 Yellow onion , garlic , parsley, lemon wedges
  6. Prepare 4 cup Short grain Spanish rice
  7. Get 6 cup Water

Once evaporated, stir in the chopped tomatoes and chicken stock. Spanish paella recipe is normally cooked with 'bomba' or 'calasparra' rice but you can use any medium-grain rice. It is recommendable to use homemade fish stock (fish fumet) to get a full of flavor Paella dish. You can also use chicken stock instead of fish stock.

Instructions to make Spanish Paella:
  1. Coat protein in the paprika,oregano,salt,pepper and brown in the skillet. Set aside
  2. Sauté onions,garlic,saffron in the skillet. Add tomatoes until caramelized a bit then add rice slowly and brown. Add water and simmer for 10 minutes until liquids absorbed.
  3. Add the protein to the rice mix and simmer until the rice is al dente. Turn up the heat for the last 5 minutes to brown bottom of rice

It is recommendable to use homemade fish stock (fish fumet) to get a full of flavor Paella dish. You can also use chicken stock instead of fish stock. Paella is always served with some lemon wedge over the top of the paella recipe Authentic Spanish Paella. This is one of my all time favorite dishes. I've been experimenting for a year now and I think I've finally got it perfect.
