- Combine the Saffron threads with the chicken stock and set aside let it infuse
- Season the chicken with salt and pepper both sides, heat up 1 tbls olive oil in a 12 inch shallow skillet or paella pan.
- Cook the chicken about 7-8 minutes each side until browned and cooked through. Remove from the pan to a plate and set aside.
- To the same pan add the Garlic, onions, bell peppers and cook adding more oil if needed cook until softened and fragrant.
- Next add the Chorizo and cook for 3 minutes when browned stirring occasionally then add the smoked Paprika stir in.
- Add diced tomatoes stir and cook for 2-3 minutes.
- Stir in 3 1/4 cups Chicken and Saffron liquid, season with 1/2 tsp Salt and 1/4 tsp ground Black pepper. Heat up then add the chicken and peas to the mix and the rice stir once boiling turn down to low simmer.
- Cook uncovered for 20 -25 minutes rotating to make sure its all being cooked this will also stop the bottom burning.add the extra chicken stock if needed.
- Remove from heat and cover with silver foil for 10 minutes during this time the rice will absorb all the liquid and flavours.
- Serve with the Italian chopped parsley and lemon wedges and Enjoy.
