Place the olive oil in a large, wide pan over a medium heat. Add the onion to the pan and gently cook for a few minutes to soften the onion. Add the garlic to the pan.
Steps to make Vegan Chorizo Paella:
- Cook the sausages in the oven according to the packaging (usually 20mins). Meanwhile dice the onion, pepper and garlic.
- Add the diced veg to an oiled pan on medium heat and cook for 10 mins until the onion browns. Boil the kettle to make 700ml of vegetable stock (normally 2 cubes)
- When the sausages finish cooking, slice them up and set aside for later.
- Add the paella rice to the pan and cook for a further 5 mins. Then mix the tomato puree, Moroccan spices and paprika
- Next, add 400ml of the vegetable stock and stir into the rice. Keep adding water slowly as the water is absorbed until the rice is soft to eat
- Mix in the frozen peas, lemon juice, coriander and slices of chorizo and cook for a further 5 mins
- Serve up and enjoy!
Add the onion to the pan and gently cook for a few minutes to soften the onion. Add the garlic to the pan. Heat a tbsp of oil in a paella/large frying pan on medium heat. Transfer the chorizo pieces to a bowl and save for later. Pour a little more oil into the pan and add the finely chopped onion.
