The ingredients needed to make Smoked Sausage and Prawn Paella:
  1. Get 1 onion, chopped or 1 cup frozen chopped onion
  2. Get 1-2 cloves garlic, grated or crushed
  3. Get Pinch saffron, soaked in 1-2 tbsp boiling water
  4. Make ready 1 cup short grain/ paella rice
  5. Make ready 1/2 Mattesons smoked sausage, sliced
  6. Prepare 1 cup frozen prawns, defrosted
  7. Make ready 1 cup frozen sliced peppers
  8. Prepare 1/2 cup frozen peas
  9. Take 1/2 cup frozen broad beans

  11. Take 2-3 tbsp Olive oil

Cook until the onion starts to soften. Then, add the gammon and sausage, continue to cook until browned. Add the saffron (plus water) and about half of the stock. Stir well, add the pepper and the beans.

Steps to make Smoked Sausage and Prawn Paella:
  1. Heat olive oil in a heavy pan.
  2. Saute the onions until golden.
  3. Add the peppers and the garlic and sauté for another 2-3 minutes
  4. Add the sausage, broad beans, rice, some salt, 2 cups of water (or ham/chicken stock) and saffron water.
  5. Bring to the boil then cover and simmer for 15 minutes.
  6. Remove lid, turn off the heat and throw in the peas and the drained defrosted prawns. Stir gently, season, stir again.
  7. Leave to stand for 5 minutes.
  8. Season and stir.
  9. Serve.

Add the saffron (plus water) and about half of the stock. Stir well, add the pepper and the beans. Turn the heat down and add the onion to soften for a couple of minutes before adding the garlic, thyme, chilli and paprika. Heat the olive oil in a large paella pan or frying pan until hot and add the chorizo. Stir in the paella rice, saffron and paprika until well mixed.
