Put the butter or coconut oil and the soft brown sugar in the pan. When melted and combined, add the sliced bananas and stir gently until softened and caramelised on both sides.

  1. To make the pancake batter - in a bowl add a egg and beat, add flour and whisk. Add milk and water gradually and keep stirring. Add melted butter and stir. Add pepper and salt and stir well.
  2. For the coconut filling - in a pan add grated coconut and add castor sugar. Stir to dissolve the sugar and add a drop of food colour. Stir and set aside.
  3. In a non-stick pan add butter and add one ladle of the batter. Spread all across the pan. On low flame cook the pancake but don’t flip sides. Set aside after 2-3 mins. Complete the batches
  4. To assemble add the coconut filling in the pancake. Roll and it’s ready to eat

Stir the milk slowly into the flour mixture to make a smooth batter, or whizz everything in a blender. Heat a shallow frying pan or flat griddle and brush it with oil.
