The noodles soften in warm water while I chopped the onions and garlic. Added some pepper flakes and slices of fried egg for presentation(per my Phillipina friend's suggestion!)and voila!

Instructions to make Pancit:
  1. Add oil to pot and saute onions and garlic till translucent.
  2. Add shredded chicken breast and all veggies and chicken stock and cook on high heat covered for 15 to 20 minutes or untill cabbage is limp.
  3. Soak noodles in water for 10 min.
  4. Add noodles and soy sauce and cook for 15 minutes…take two forks and separate noodes so the dont lump.add salt and pepper to taste
