- Take 4 Pav
- Get Cooking Oil for deep frying
- Take Green chutney
- Prepare 4-6 green chilli
The batter is made with nutty gram flour (besan) and spices. The filling consist of savory, spiced mashed potatoes. This vegan street food classic from the streets of Mumbai is a carb-lovers dream. Spiced mashed potato is dipped in a batter and deep-fried until crisp, before being placed inside a roll spread with tamarind chutney.
Steps to make Vada Pav:
- Heat oil in a karahi tv and put hing, mustard seeds and fennel seeds. Roast.
- Add chopped onion and chilli - garlic paste and sauté well.
- Add turmeric powder. Salt and red chilli powder sauté well. Add mashed boiled potatoes and coriander leaves. Mix lemon juice. Sauté to make a paste. Let it cool.
- Now make small lemon sized balls and keep in a plate.
- In a separate bowl make a batter of gram flour by adding water. Mix thoroughly. Add salt, red chilli powder and mix well.
- To prepare Masala paste: Put oil in a pan and add garlic, whole red chilli, sesame seeds and coconut.
- Mix them well and add roasted Peanuts and salt red chilli powder. Mix. Now add tamarind and grind all the ingredients to a paste
- Heat oil in a karahi. Add soda bi carbon to gram flour batter. Mix well. Dip and coat each prepared spiced potato balls in this batter and drop them in hot oil 2-3 at a time and deep fry on medium flame till crispy golden brown. Deep fry 4 green chilli and take out.
- Take buns. Make a cut in between them. Saute on low flame for 2 minutes. Put green chutney, masala paste and the fried masala pakoda between them.
- Fry 4-6 green chilli. Serve hot garnished with fried green chilli on top of it.
