Place the vada and press the pav and the Mumbaiya style vada pav is ready to serve. Serve immediately while the vadas are still hot. You can also serve along with some fried green chillies. These days there are many ways to make and serve the vada pav.

Instructions to make Mumbaiya Vada Pav:
  1. To make Pav
  2. Take a bowl.
  3. Add milk, yeast, salt and sugar into it.
  4. Using beater beat it using dough cutter for 2-3 minutes.
  5. Now add all-purpose flour into 2-3 batches and mix it really well using whisker.
  6. Knead the dough using beater machine.
  7. Dough should be lumpy in texture.
  8. Now on clean platform dust all-purpose flour.
  9. Remove the dough from bowl and take it on dusted platform.
  10. Now add oil in 2-3 batches and massage it. (Like making fafda)
  11. Now tuck in the dough and on dusted platform keep it for 10 minutes.
  12. Dust all-purpose flour on the dough and cover it with muslin cloth.
  13. After that lightly punch the dough and tuck it in again.
  14. Now make 60-80 gram balls from dough.
  15. And keep it in greased baking mold.
  16. Keep space between dough.
  17. Now without tapping just cover it again with muslin cloth and keep it for proving for 25-30 minutes.
  18. Now after 30 minutes you will see the dough doubles in size and stick with each other.
  19. Just spray some water on dough.
  20. After that put this mold in oven for baking on 180 degree for 15-18 minutes.
  21. After baking immediately brush milk on pav and let it cool down for 10 minutes.
  22. Now remove the ladi pav from mold and cut it.
  23. Store it into zip lock bag or air tight container.
  24. To make dry red chutney
  25. Take a pan and dry roast the chilli on low flame for 1-2 minutes.
  26. Remove it from pan and keep it aside.
  27. Now dry roast garlic, peanuts and coconut powder.
  28. Now let it cool down.
  29. Now take a food processor and in the jar add roasted ingredients and crust it.
  30. Now add salt and chilli powder and crush it again.
  31. Remove it in bowl and keep aside.
  32. To make Green chutney
  33. Take a food processor jar.
  34. Add coriander, chilli and ginger and add little water and grind it well.
  35. Now add salt, lemon juice and black pepper powder and add little water and again grind it.
  36. Chutney should be thick in consistency.
  37. Remove it into a bowl and keep aside.
  38. To make Vada
  39. Take a pan and oil into it.
  40. When oil turns hot add mustard seeds and let it crackle.
  41. Now add asafoetida green chilli paste and ginger paste and mix it well.
  42. Add turmeric powder and salt to taste.
  43. Now add boiled and mashed potatoes and mix it well.
  44. Add fresh coriander leaves and mix it well and turn off the flame.
  45. Meanwhile to make better take a bowl.
  46. Add chickpea flour and salt into it and mix it well.
  47. Now add water little by little and make thick better.
  48. Keep it aside.
  49. Now make balls from the potato mixture.
  50. Take a frying pan and add oil into it and let it turn hot.
  51. Now in the better add baking soda and little water and mix it well.
  52. Now deep the ball into it and put it into a piping hot oil.
  53. Fry Vadas until little golden.
  54. Remove it and keep it on kitchen towel.
  55. Fry green chillies too.
  56. Now to assemble Vada Pav take 2 Pav and cut it from middle.
  57. Spread butter, green chutney and sprinkle dry red chilli powder.
  58. Assemble Vada and cover it.
  59. Serve it with green chillies.
  60. Serve hot.
  61. Mumbaiya Vada Pav is ready to be serve.
