Steps to make Patishapta:
- For filling: Heat a pan over a low flame. Add khoya, desiccated coconut, sugar, dry fruits and mix well. Keep stirring the mixture till it gets sticky. Turn off the flame. Add cardamom powder, mix well and keep aside to cool.
- For batter: Take refined flour (maida), suji and rice flour in a mixing bowl. Add in sugar, baking powder and a pinch of salt. Then add milk and mix it carefully to make a batter of flowing consistency making sure no lumps will form. Keep aside for 30 minutes.
- Heat a non-stick pan or tawa. Drizzle some oil over it and spread evenly. Pour a ladleful of batter on it and spread it thinly in a circular motion like dosa with the ladle.
- Cover the pan with a lid and cook the crepe on low flame for about 30-40 seconds or till done. We don't need to cook the crepe from other side.
- Reduce the flame to low and remove the crepe to a plate.
- Now put 2tbsp of the filling lengthwise with a cylindrical shape at the centre of the crepe and roll it up completely to make the patishapta. Follow the process for making similar patishaptas with rest of the batter and filling.
- Place them on a serving plate and serve warm or cold.
