Scrape the paste into a food processor and whiz with the basil and pine nuts. Pour the mix into a bowl and stir in a few good lugs of olive oil. Add the Parmesan and season with salt, pepper and the juice of the other lemon. If the pesto looks stiff, moisten it with olive oil.

Steps to make Chicken Pesto:
  1. Heat olive oil in pan and brown chicken breast fillets for 5 minutes each side.
  2. Remove chicken from pan and add baguio beans. Add a little water, about 1/4 cup and scrape the brown bits at the bottom of the pan. Cook until soft to your liking.
  3. Add chicken back into the pan with the pesto sauce and the tomatoes. Simmer for 5 minutes then serve.

Add the Parmesan and season with salt, pepper and the juice of the other lemon. If the pesto looks stiff, moisten it with olive oil. Prepare pesto sauce according to package direction. Moisten chicken with water, shake off excess, and coat complete with bread crumbs. Spread pesto sauce evenly over chicken breasts.
