- Cube all vegetables.Parboil them except brinjal in 1 cup water without losing their crunchiness.Strain and reservestock.Soak dal overnight.Discard water and make a paste of it alongwith baking powder.
- Add kalonji,pinch of turmeric,red chilli powder,chopped green chillies and baking powder to the batter and beat well to make the batter light and well mixed.Heat mustard oil and fry small fritters out of the batter.Set aside.
- In the remaining oil fry the cubed brinjal smearing little salt.Set aside.Sprinkle paanchphoron and hing.When they crackle,add the parboiled vegetables and fry.Add ginger paste,tomato puree, turmeric and red chilli powder, coriander and cumin powder,salt and sugar to taste.
- Add just enough of vegetable stock to cook the vegetables till tender.Add the fried lentil fritters and give it a boil.Sprinkle garam masala and ghee and toss.
- Garnish with chopped coriander and green and red chillies.Serve hot as a side dish with steamed rice and dal.
