  12. Get 1/8 tsp Himalayan salt

In a large bowl, whisk together the almond flour, coconut flour, erythritol, flaxseed, baking powder, xanthan gum, and salt. Add in the eggs, cream, melted butter, vinegar, vanilla and water into the dry ingredients and whisk well until combined using a hand mixer. The dough will be very sticky. Make the glaze by mixing, creamed cheese, butter, erythritol and vanilla in a mixer.

  1. Preheat oven to 350 degrees F.
  2. Place Almond milk in a microwave safe bowl and microwaving it for 45 second.
  3. Transfer warm Almond milk to the bowl of an electric mixer and sprinkle active yeast on top stir until dissolve. Add in the Pyure stevia granulate sugar and olive oil. Mix until well combined.
  4. Add the scotty everyday flour in a mixing bowl added the salt
  5. Added to the flour the wet ingredients until a dough begins to form. Its gonna be sticky use your hands to knead the dough for 8-10 minutes on a well-floured (almond flour) surface.
  6. Transfer dough to a well-floured surface and roll out into a rectangle.
  7. Spread softened butter over dough
  8. In a small bowl, mix together brown sugar and cinnamon.
  9. Using your hands sprinkle sugar and cinnamon mixture over the buttered dough, then rub the brown sugar mixture into the butter.
  10. Tightly roll dough up Cut into 1 inch sections with a serrated knife or floss.
  11. Transfer rolls dough ball to a well-oiled bowl, cover with plastic wrap and a warm towel. Allow dough to rise for 1 hour.
  12. Bake cinnamon rolls for 20-25 minutes or until just slightly golden brown on the edges
  13. Allow them to cool for 5-10 minutes before frosting.
  14. In the bowl of an electric mixer, combine cream cheese, 1 tbsp butter, powdered sugar, cinnamon and vanilla extract.
  15. Beat until smooth and fluffy. Spread over cinnamon rolls and serve immediately.

The dough will be very sticky. Make the glaze by mixing, creamed cheese, butter, erythritol and vanilla in a mixer. You may need to add almond milk to get a smooth consistency. Take off the stove and/or make sure the cheese is melted, but not bubbling. Now add the almond flour and baking powder.
