Mushrooms - chestnut mushrooms (brown mushrooms) are the best mushrooms to use here, they have more flavour than button mushrooms, however, if all you can find is button mushrooms then go ahead and use them. You will still have a lovely creamy mushroom risotto. You can also use wild mushrooms if you wish. If you do use wild mushrooms make sure and buy good quality wild mushrooms.

Steps to make Creamy porcini mushrooms risotto:
  1. Revive dried mushrooms in a bowl with some water for few minutes
  2. Put mushrooms in a pan (don't throw their water away) with half of the olive oil, chopped onions and parsley. Season to taste.
  3. Toast rice in a pot with the remaining olive oil
  4. Simmer rice with the water you used for mushrooms, until reduced
  5. Add broth to the rice pot and let it cook for about 16 minutes. Keep stirring!
  6. While rice is cooking.. Add double cream to the mushrooms and then use your hand-held liquidizer!
  7. Add the mushrooms cream to the rice pan and cook the whole thing on a low gas for 1 minute
  8. Final touch: turn off the stove and add grated Parmesan cheese

You can also use wild mushrooms if you wish. If you do use wild mushrooms make sure and buy good quality wild mushrooms. Strain through a sieve, reserving the liquid. A mushroom risotto can be taken in many different ways, depending on what kind of mushrooms you have and whether they are introduced at the very beginning of cooking or just added at the end, as I'm going to do here. The inspiration for this recipe came when I was in Japan and saw mushrooms being cooked completely dry on a barbecue or griddle pan.
