- Add whole cloves, cardamon, bay leaves, cinnamon stick, onion and garlic. Fry for a few minutes. Do not brown onion.
- Add the ginger, tomato and stir for 1 - 2 minutes.
- Add the spices to onion mix and stir fry for 2 - 3 minutes. Add the vinegar during this process.
- Add the pork and stir for a few minutes. Add salt (I start with 2 tsp)
- Add 2 cups of water to the dish and cover cook on low heat (stirring occasionally) till meat is tender. Add more salt if required.
Best served with basmati rice, natural yogurt and lime pickle. Create the spice paste by grinding all the spices to a fine powder. Place the spices into a blender with the onions, garlic, ginger, vinegar and a splash of water then blend to make a paste. Put the meat into a bowl and sprinkle with half a teaspoon of turmeric, salt and two tablespoons of the spice paste. Pork vindaloo was bought into India by the Portugues.
