  2. Heat wok (or skillet) to med-high and add oil
  3. Slice meat into thin (1/2 in) strips and sear meat in wok to desired temperature (medium rare recommended)
  4. Combine choped garlic, soy sauce (if not used in marinade), ginger, onion, pepper, chopped celery, and tomatoes into bowl and mix well
  5. Lower heat of wok to meduim and add all ingedients including cooked meat
  6. Cook 3-4 minutes ( just untill vegetables are slightly cooked)
  7. Best served over egg noodles. Also works with white or brown rice, or over a flour tortilla fajita style

Heat the oil in a large deep skillet. Cook, stirring, over medium hight until browned. Cover and simmer for about half an hour, until nice and tender. Return the heat to high and add the spring onions, peppers and celery. In a large skillet, melt butter over medium-high heat.
