  5. When fully cooked (cheese melted, chicken at 165°F, tortillas are hard), remove tacquitos from pan. Gently wrap in paper towels to soak extra oil off for 5 minutes.
  6. Remove from paper towels, serve with sauce.

To season the shredded chicken, toss it in a mixing bowl with some easy-to-find Mexican spices like chili powder, ground cumin and a few others. To make the salsa, mix all the ingredients with a good pinch of salt. Fry the onion and pepper on high until softened and slightly golden. Stir in the cumin and chilli powder and cook for a minute.
