There are many variations of Misal Pav, depending on the origin and the spices used. Kolhapuri Misal Pav, Nashik Misal Pav, Puneri Misal, Khandeshi Misal Pav, Nagpuri Misal are some popular variants of the basic Misal recipe. Steps to make Misal Pav (Sprouted Moth Beans):
- Wash & soak the beans overnight or 6-7 hours till it becomes soft. Drain the water out on a cheesecloth or muslin cloth on a colander. Cover and sprout the beans for 24-48 hours. If it's a very hot place, keep it in fridge. The cloth should always be damp/ wet. Once it sprouts to your desire, wash the brand thoroughly. Pressure cook the Sprouted with baking soda for 6-7 whistles and 4 cups water. Let the pressure release by itself.
- Heat oil on a Vessel, add curry leaves/ Kadi Patta. Then add the onions. When it starts becomimg red, as the ginger garlic paste and saute it more. At last add the tomatoes and cook and saute it more till tomatoes gets cooked nicely. In the process, add the turmeric and chilli powder too.
- Now add the pressure cooked Sprouted Moth Beans and mix well. Add salt as per taste. If needed add more water (I didn't add any water as the consistency was fine for me). Cook further till the beans gets blended nicely with the gravy and the red chilli oil/ TARI starts floating above. Your Usal / Misal is ready to be served. - Thecha Recipe
- In individual plate, smash and add boiled potato, add Farsan/ Sev Bhujia and add the cooked beans, if you want TARI add it on top. Top it with onion, tomato, cilantro and lemon juice and serve with Misal Masala Powder, Thecha along with Pav (Butter Toasted Pav taste divine with it). - Misal Masala Powder
