Finely slice the chilli, then mix (as much as you. Stir in the peanut butter and kecap manis. When thickened, add the coconut milk and half a can of water, bring to a simmer, season, then add the chicken with its juices. Turn off the heat, add the rest of the lime juice and season.

  1. Add some oil (I use EVOO) to a large skillet over medium high heat. Let it heat up for about a minute and then add the chicken and broccoli.
  2. Mix the ingredients for the sauce in a bowl. Flip the chicken over so it is cooking on both sides then add the sauce. Turn the heat down to medium low and let the chicken finish cooking, stirring occasionally.

When thickened, add the coconut milk and half a can of water, bring to a simmer, season, then add the chicken with its juices. Turn off the heat, add the rest of the lime juice and season. Scatter over the sliced chilli, spring onions, fresh coriander and peanuts to serve. Add the orange juice, lime juice, soy sauce, honey and ginger and whisk to combine. Heat the oil in a medium frying pan over a medium-high heat.
