Stir-fry for a few seconds, just until fragrant, then add the cabbage and carrots. Stir-fry for one to two minutes until the cabbage begins to wilt, then add the salt and wine/soy sauce mixture. Cover and cook over high heat for one minute until just wilted. Stir-fry the spring onion and ginger until fragrant.

Season with salt, or garlic salt, and more tamari or rice vinegar to taste. Optionally, add the cooked tofu towards the end of cooking and cook until warmed through. If doing ahead of time, cool under running water and chill until ready to stir-fry. Heat the oil in a wok or large frying pan.

Instructions to make Spicy Cabbage Stir fry:
  1. Chops up all veggies, add oil to hot pan & set on med heat
  2. Add in oil, cabbage & cook for about 5 mins with lid on
  3. Add in your onions, mushrooms, green peppers, garlic & ginger. Continue to cook till they start to soften
  4. Add in soya sauce, chili flakes, Sriracha and kale. Stir together.
  5. Cook to your desired doneness
  6. Garnish with green onions & (hopefully) enjoy !

If doing ahead of time, cool under running water and chill until ready to stir-fry. Heat the oil in a wok or large frying pan. Heat up the wok until it lightly smokes. Pour in oil then add Chinese sausage and ginger. When the sausage slices curl up a little, stir in cabbage and scallions.
