- Heat a little oil to another pan and crack in the eggs. Scramble the eggs until cooked.
- Add in cooked rice and soy sauce. Stir thoroughly.
- Plate up the rice then place some of the duck and veg mix on top. Sprinkle over chopped coriander and salted peanuts.
