  2. Make ready 3 tsp Baking Powder
  3. Make ready 1/2 tsp salt
  4. Make ready 150 grams caster sugar
  5. Take 1 medium egg
  6. Prepare 225 ml semi skimmed milk (full fat will work)
  7. Take 4 tbsp vegetable oil
  8. Get 1 eating apple
  9. Prepare 3 tbsp golden syrup
  10. Prepare 150 grams sultanas

In a large bowl, thoroughly combine both flours, the oats, baking powder, cinnamon and sugar. Add the grated apple and stir well to distribute it evenly through the mixture. In a jug, combine the yoghurt, milk, egg and oil. Tip this into the dry ingredients and add.

  1. This is a great, easy base-recipe - it doesn't require much 'faffing', you can do most of it in one bowl. I add apples, sultanas and syrup to make breakfast muffins my boys adore, but you can play around with alsorts once the base mix is made, and mix/swap to make some great combinations. I have used lemon curd, blueberries, chocolate chunks (with and without orange juice) and banana's.
  2. You can also mix out some of the ingredients. If you don't have plain flour, use self raising flour and skip the baking powder. When i run out of caster sugar, i replace it with soft brown sugar, which also adds to the syruppy taste. It's a very forgiving recipe!
  3. Pre-heat your oven to gas mark 6. Line a muffin tray with muffin / bun cases.
  4. Stir together the flour, baking powder, sugar and salt. There is no need to sift first. Make a 'well' in the centre.
  5. Beat the egg in a small bowl/jug, add the oil and milk. Pour into the 'well' of the dry ingredients in one go.
  6. Mix quickly and lightly with a fork until all is combined, but don't beat. Your batter should be a little lumpy, and is complete, so you may add other ingredients now.
  7. Add 1 finely diced apple, the sultanas and syrup - add more syrup if you like a more syruppy taste, but not too much or it will be too heavy. Gently fold the ingredients in, being careful not to over-work the batter.
  8. Divide the muffins between the 12 cases, mine are usually full to about 3mm lower than the top of the case - this allows them to rise over the top, and 'dome' like shop bought ones. If you want smaller muffins, you will have extra batter to increase the quantity.
  9. Pop in the oven for 25 minutes (until golden, and a knife comes out clean when prodded to the centre of a muffin). Place on a wire rack to cool - stand guard to stop the kids eating them all while they are warm :)

In a jug, combine the yoghurt, milk, egg and oil. Tip this into the dry ingredients and add. In a bowl combine butter, sugar, milk and beaten egg. Sift in flour, cinnamon, salt and mix. Fold in diced apples and sultanas.
