  2. In a large frying pan, heat the butter and oil over moderately high heat. Add the Steak and saute for 5 minutes. Turn the Steak over and continue sauteing until done according to taste, about 5 minutes for rare. Transfer to a carving board with a well to catch the juices. Cover with aluminium foil and keep warm.
  3. Reduce the heat to moderate. Add the onion to the remaining drippings in the frying pan. saute the onion for about 5 minutes until soft. Gradually stir in the cream. Cook the source, stirring constantly, for 2 to 3 minutes until it thickens slightly. ( do not boil ). Season the source with salt.
  4. Cut the steak crosswise into thin slices and transfer into a warmed serving platter. Poor any accumulated juices and the onion sauce over the steak and serve immediately.

Transfer to a plate and set aside. Heat the sesame oil in a wok or frying pan over a medium-high heat and add the onion. My husband likes pepper steak with sweet 'n sour sauce. Stir in pineapple with syrup, vinegar and soy sauce. Pour excess oil from the pan and add the vinegar.
