The ingredients needed to make Pork Belly in Dark Sauce:
  1. Get Pork Belly or any pork meat
  2. Make ready Dried squid
  3. Get Minced garlic
  4. Get Dried chilli
  5. Get Shallots

  8. Take 1 Tbsp soy sauce
  9. Take 2 Tbsp oyster sauce
  10. Make ready 1 tsp sesame oil

  14. Prepare 2 tsp sugar

Heat up wok until very hot and turn to medium fire, add the pork belly into wok together with star aniseed and cinnamon stick and toss and turn it by using a tong without adding any oil, add in the balance sauce from the marinating until the sauce absorbed by the pork belly. Preheat wok with oil and saute garlic and shallots till fragrant. Add in pork and stir fry till pork changes colour. Add in water and bring to boil.

Instructions to make Pork Belly in Dark Sauce:
  1. Brown the pork belly with some hot oil and put aside.
  2. Stir fry the minced garlic, dried squid and dried chilli till aromatic. Sprinkle some water if its dry.
  3. Add in the pork meat and continue to stir fry. Add in the sauce slowly with 1 tbsp and continue to stir fry till aromatics.
  4. Add in all the sauce and 1 bowl of water and let it simmer in low medium heat for 20 mins to soften the meat and let the meat absorb the sauce taste.
  5. Add in ladies finger, shallots and spring onion and continue to braised it for another 10 mins.
  6. The sauce should be a little dried up now, and stir fry for a little while till you see the sauce is almost dried up and the sauce starts to release its aroma and ready to serve.

Add in pork and stir fry till pork changes colour. Add in water and bring to boil. Then, add soy sauce, sugar and dark soy sauce and mix till well combined. Dry the belly slices with kitchen paper, then season with salt and pepper. Mix together the ingredients for the sauce and toss.
