- mix egg, milk and hot sauce in large bowl
- wash frying chicken pieces (thighs are my fav) and dry
- add chicken to bowl and make sure all pieces are covered
- cover bowl with plastic wrap and put in fridge. let sit at least an hour bit 4-8 hours is best
- when ready to cook take large skillet (cast iron is best) and fill about halfway with peanut oil and heat on stove over heat a little lower than med
- in large ziplock bag or large bowl combine flour, salt, pepper, cyanne and season salt
- with tongs move chicken one piece at a time from wet mix to flour mix, coat chicken completly and remove to large piece of foil or plate or pan just make sure the chicken pieces aren't touching
- to see if oil is ready put a little pinch of flour into oil. it should sizzle
- when oil is ready place chicken skin side down in pan. my skillet fits 4-5 pieces just make sure there is space between every piece.
- let cook skin side down about 15-20 minutes checking occasionally. don't let skin burn it dries out the chicken
- flip chicken to bone side down qnd cook another 15-20 minutes
- it is best to remove chicken and place on cooling rack wirh paper towel on counter putting directly onto paper towel changes the taste
- repete and cook with rest of chicken
- cooking time varies due to the temp you use and the part of chicken you are cooking. it is best to cook a little longer on a slightly lower temp so you don't burn the skin but the chicken is cooked all the way through.
- let chicken sit at least 5 minutes to allow juices to settle in the meat
