  7. Turn off heat. Add cilantro, stir and let it sit for a few minutes before serving. Serve with hot pepper sauce, a scoop of sour cream, shredded Cheddar and/or tortilla chips if desired.

Drain fat and return to heat. Add chili powder, cumin, oregano, paprika, cayenne (if using), and season generously with salt and pepper. Add the minced beef, breaking any larger chunks. Pick the coriander leaves and put aside, then finely chop and add the stalks to the pan, with the balsamic vinegar. Season with a good pinch of sea salt and black pepper.
