The ingredients needed to make Kimchi:
  1. Prepare 1 Cabbage
  2. Take 1 medium carrot julienned
  3. Take 1 cucumber julienned

Meanwhile, make the kimchi paste by blending the garlic, ginger, fish sauce (if using), chilli sauce, sugar and rice vinegar together in a small bowl. Rinse the cabbage under cold running water, drain and dry thoroughly.

Steps to make Kimchi:
  1. Cut up cabbage into two inch pieces. Wash the cabbage then sprinkle very generous amounts of salt, shake the mixture and cover it and let it stand at room temperature for a day.
  2. After the cabbage has stood for a day, rinse the cabbage and drain away excess water.
  3. Dry roast the red chillies in a pan till they turn dark brown.
  4. Take red chillies, red chilli powder, oil and vinegar and blend together to form a thick paste. Add small amounts of sugar and blend for a bit.
  5. Mix all ingredients in a jar or airtight container and let it stand for 2-3 days at room temperature.

Meanwhile, make the kimchi paste by blending the garlic, ginger, fish sauce (if using), chilli sauce, sugar and rice vinegar together in a small bowl. Rinse the cabbage under cold running water, drain and dry thoroughly. Transfer to a large bowl and toss through the paste, along with the radishes, carrot and spring onions. Serve straight away or pack into a large jar, seal and leave to. Kimchi is made by cutting vegetables into slices or strips, massaging them with salt to create a brine, adding spices, then densely packing the mixture into a jar and leaving it to ferment for at least a week, but often longer, at room temperature.
