Place beef tomatoes on a plate, spread mashed avocado on tomatoes then top with kachumbari, If desired add more dressing. Place the onion in a medium bowl, cover with water, and stir in sea salt. Stir the drained onion, tomatoes, cucumber, cilantro, jalapeno, and avocado together in a large bowl.

  2. Chop the avocado into a nice shape and place into a plate.
  3. Add the tomatoes and onions onto the plate in decorative way.
  4. Pour the lemon juice on top of the tomato and onion and the salt also.
  5. Serve

Place the onion in a medium bowl, cover with water, and stir in sea salt. Stir the drained onion, tomatoes, cucumber, cilantro, jalapeno, and avocado together in a large bowl. Squeeze lime juice over the salad to taste and season with salt and pepper. So I made some Avocado Kachumbari for my Githeri dish. You can eat this alone as a salad too.
