  6. Make ready 2 tbsp fish sauce
  7. Make ready 2 potatoes diced
  8. Prepare 1/2 cup unsalted roasted peanuts

Add the bamboo shoots and Thai basil and continue to simmer. For the curry, heat a wok until hot, add the oil and beef and stir fry until just browned. Spoon coconut cream (thick layer at top of can) into a large skillet; stir in curry paste. Bring to a boil over medium-high heat.

  1. Put 4 tbls coconut milk & curry paste into bowl & mix well
  2. Heat oil on medium then add curry paste mixture & fry for 2 minutes
  3. Add 1/4 of coconut milk & stir to mix thoroughly. Keep stiring until the mixture is bubbling & fragrant.
  4. Turn heat to medium then add beef & cook for 5 minutes or until the beef is brown and coated with curry paste.
  5. Add remaining coconut milk & bring mixture to bowl. While boiling add potatoes, sugar & fish sauce.
  6. Let the mixture boil for 5 minutes then add roasted peanuts, turn the heat to simmer for 20-30 minutes or until potatoes are cooked & beef is tender.

Spoon coconut cream (thick layer at top of can) into a large skillet; stir in curry paste. Bring to a boil over medium-high heat. Add remaining coconut milk, sugar, fish sauce, and red pepper; bring to a boil. Sides for Thai Red Beef Curry. For most it has to be some white jasmine rice as a side for curry.
