  1. Make the sauce: Combine the soy sauce, oyster sauce, vinegar and sugar in a heatproof container, and microwave for 30 seconds. Add the sesame oil and ra-yu and mix well.
  2. Chop up the zha cai roughly. Cut the tofu into quarters, top with the zha cai, and pour the sauce over. Sprinkle with some sesame seeds and serve.

Make it your own with other fresh herbs such as Thai basil, mint or shiso leaves, or add crunch with fried shallots or roasted peanuts.
