Sauteed the Chinese sausage slowly until it turns aromatic and the oil rendered.   2. Add in uncooked white rice. Add in 2 tbsp soy sauce, 1 tbsp oyster sauce and 1 tbsp dark soy sauce. Add in stock soup till covered rice and cook the rice for 15 minutes.
  3. Add salt and pepper to adjust taste. Place the rice in lotus leaf or bamboo leaf and wrap it.
  4. Place on steamer and and steam for 15 minutes in high heat. Garnish with chopped spring onions or coriander and serve.

When serving, a dash of soy sauce-based seasoning is stirred into the rice. Add the Chinese sausages on top. Put the pot over the stove on medium high heat. Slice the sausage and serve over the rice. This Chinese sausage fried rice is the ultimate fried rice of them all.
