  1. Take 200-250 g shelled Prawns *thawed if frozen
  2. Make ready 1-2 Spring Onions *finely chopped
  3. Make ready 1 small piece Ginger *grated
  4. Get 2-3 Shiitake Mushrooms *optional, finely chopped
  5. Take 1 tablespoon Egg White
  6. Get 1 tablespoon Potato Starch OR Corn Starch
  7. Make ready 1/8-1/4 teaspoon Salt
  8. Prepare White Pepper
  9. Prepare 1 pack Wonton Wrappers *25 to 30 sheets
  10. Take Oil for frying
  11. Prepare Dipping Sauce
  12. Get 4 tablespoons Ponzu *OR 2 tablespoons Rice Vinegar & 2 tablespoons Soy Sauce
  13. Make ready 1/2 Spring Onion *finely chopped
  14. Prepare Rฤ-yu (Chilli Oil) *optional
  15. Make ready Shichimi (Japanese Chilli Spice Mix) *optional

Stir well to combine all ingredients until the fillings become sticky paste. To fold the wontons: Place filling in the center of each wrapper. Fold one end of the wrapper over and moisten the bottom edge. You could deep-fry these wontons for crispy prawn wontons.

Steps to make Crispy Fried Prawn Wontons:
  1. Coarsely chop up shelled Prawns, add Spring Onion, Ginger, Shiitake, Egg White and Potato Starch, then Salt & Pepper and mix well.
  2. Place 1 wonton wrapper on a flat surface such as a plate, place 1 heaped teaspoon prawn mixture in centre. Wet edges with water and fold up to form a triangle and pinch to enclose very well.
  3. Note: If you are willing to do an extra work, make some pleats on the top sides of the triangle, then press firmly.
  4. Repeat with remaining mixture and wrappers.
  5. Heat Oil to 160 to 170โ„ƒ and deep-fry them until nicely browned. *Note: If the oil is too hot, Wontons get browned too quickly before the filling is cooked.
  6. Serve with your favourite dipping sauce. My favourite dipping sauce is Ponzu. If you donโ€™t have Ponzu, use Soy Sauce and Rice Vinegar. I added Spring Onion and Shichimi (Japanese Chilli Spice Mix) to the sauce.
  7. *Note: I used yellow coloured wrappers for the triangle Wontons in the below photo.

Fold one end of the wrapper over and moisten the bottom edge. You could deep-fry these wontons for crispy prawn wontons. Heat vegetable oil in a hot wok until the surface seems to shimmer slightly. Carefully add the wontons in batches and deep-fry for about two minutes or until just cooked and lightly browned. To test the wontons, remove one using a slotted spoon and cut into it to see if the prawns are cooked through.
