- Heat 1 tsp olive oil in a pan. Add chopped garlic and roast it till slightly brown. Add mashed potatoes and cook with garlic for 5 minutes on low heat.
- Add salt, garam masala and mix well. Turn off the heat and add tomatoes, rice,olives and herbs. Let it cool.
- Stuff the slit peppers with the above mixture. Brush 1 tsp olive oil in a pan. Gently place the peppers with stuffed side up, in the pan. Cook covered for 5 minutes or till slightly tender on medium heat.
- Remove the cover. Sprinkle the roasted seeds and red chilli powder on top and cook without lid till crisp from under. Serve hot.
Place potatoes hollowed side down on sheet pan. Add grated potatoes, sweet rice flour, basil, nutmeg, salt and pepper. Place mixture in a prepared muffin cup, pressing it into the bottom and up the sides to form a cup. (Make sure the bottom is completely covered.) Repeat with remaining.
