  1. Get 3 Kg Gajar/ Carrot
  2. Take 2.5 litre Full Cream Milk
  3. Get 200 gms Khoya/ Mawa
  4. Prepare 5-6 Kesar Petals
  5. Make ready 3-4 Tablespoon Desi Ghee
  6. Take 5-6 Elaichi Powder
  7. Prepare 1 Cup
  8. Get 250 gms Sugar
  9. Get 12-14 Badaam/ Almonds
  10. Take 5-6 Kaju/ Cashews

An extraordinary dessert which takes me to trance every time I eat was traditionally made using carrots, ghee and milk. Sere gajar ka halwa made with khoya warm or chilled. Making gajar halwa in the Instant Pot is so easy as you do not have to spend time frequently stirring the halwa. It saves a lot of time.

Steps to make Gajar Ka Halwa:
  1. Peel off Gajar skin, then soak them in a bucket of water & leave them for 10-15 minutes.

    Gajar Ka HalwaGajar Ka Halwa1. Now take a pan, add 1 Tablespoon Desi Ghee in it & keep the gas on low flame.
  2. When ghee gets heated up, add dry fruits in it & roast them till they start sizzling or popping.
  3. When they start popping, turn off the flame & take them out on the chopping board & chop them roughly.
  4. Now take a Big Kadhai, add 2 Table Spoon Desi Ghee in it & keep the gas on medium-low flame.
  5. Then add grated Gajar in it & mix them properly.
  6. Now add 2.5 Litre Full Cream milk in it & mix them properly.
  7. I have taken 3 liters but only 2.5 litre is used.
  8. Now after every 5-10 minutes keep stirring the mixture so that it doesn’t get stuck at the bottom.
  9. Keep stirring it till the milk starts boiling.
  10. After 1.5 Hours, when the milk starts boiling, add Kesar Petals in it & mix them properly.
  11. Now at this stage keep stirring it continuously from all sides till the milk is completely reduced or evaporated.
  12. This hole process takes around 3-4 hours.
  13. After 3-4 hours, when milk is completely reduced or evaporated & the Gajar mixture becomes soft & completely dry, then add 200 gms Khoya/ mawa in it & mix it properly.
  14. Now roast khoya for 10-15 minutes.
  15. After 10-15 minutes, add 1 Cup Sugar, roughly chopped dry fruits & Elaichi Powder in it & mix them properly.
  16. Now cook them for 15-20 minutes till sugar is completely dissolved in Halwa.
  17. Add 1-2 Table Spoon More Desi Ghee in it & mix them properly.
  18. After 15-20 minutes, sprinkle some Khoya on top.
  19. Your Gajar Ka Halwa is ready to be served.
  20. This Whole Halwa making process takes around 5-6 hours.
