If you are unable to find fresh calf's liver, you should be able to find it frozen. It will often come pre-sliced, which can be to your advantage since slicing liver can be a bit difficult. Drain milk from liver, and coat slices in the flour mixture. When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan.

  5. Melt the rest of butter to pan. dredge liver in the flour mixture (be careful because it falls apart easily) and fry on medium heat for about 4 minutes on each side. You may have to cook in batches if using smaller pan, in that case just divide the butter for each batch.
  6. When each side is nice and browned add onions back to pan and saute for a minute or so more. I like my liver and onions crispy! But you can make a gravy out of reserve from the pan.

Drain milk from liver, and coat slices in the flour mixture. When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium.
