Toss the noodles with pomegranate, lime and orange juices. Add sliced onions, chopped green onions and cilantro and toss to mix. Add salt and chile flakes and toss to mix. Serve in a Napa cabbage leaf.

Steps to make Spicy Glass noodle salad:
  1. Minced meat - marinade with salt, pepper and dark soya sauce for half an hour
  2. Heat olive oil and sesame seed in a pan. Once slightly hot, put in garlic and saute for 2 mins. After that, add the minced meat into the pan. Stir fry till dark and dry. Set aside to cook.
  3. Boil the long beans till slightly soft. Drain and wash with cold water.
  4. Soak the glass noodles in hot water for 10 mins and drain.
  5. Chop the cabbage into slices. Mince the torch ginger.
  6. Add the lettuce, glass noodles, long beans, pickled carrots, torch ginger in a large bowl.
  7. Mix in chilli sauce, sambal, and squeeze in the lime. Mix well till combined.
  8. Add in the minced pork and crushed peanuts.

Add salt and chile flakes and toss to mix. Serve in a Napa cabbage leaf. Garnish with extra green onions, chile flake and cilantro for more color. The bean thread glass noodles in this dish are a nice break from all the rice noodles being served everywhere and also healthier for you. The dressing is the very common lime dressing used in a lot of dishes in Thailand and you are free to use just about whatever left over vegetables you have left floating around in the fridge.
