- Get 1 big size capsicum (chopped)
- Prepare 2 medium size onion (chopped finely)

- Prepare 1 1/2 tbspn pav bhaji masala
- Prepare 1 1/2 dhaniya powder
- Take 1 tspn kasuri methi
- Make ready 2 cheese slices
- Prepare 1/2 cup spring onions
- Prepare As required Coriander leaves for garnish
- Get 500 ml- 600m l water
- Take As required Coal for smoking (optional)

The seasoning we use for this Pav Bhaji Fondue recipe includes Amchur or Raw Mango powder, Pav Bhaji masala, Jeera powder, Red Chilli powder (preferably Kashmiri Red chilli powder) and Turmeric powder.
Instructions to make Pav bhaji fondue:
- In a pressure cooker put carrot, bean and tomato. Add 500ml water and little salt. Pressure cook the veggies for 1 or 2 whistles. - Let it cool, strain the vegetables. Do not throw the stock.
- Now in a kadhai heat 2tbspn oil and 1tbspn butter. Keep the flame low and add all the spices. Pav bhaji masala, kashmiri red chilli powder, dhaniya powder. Mix well.
- Now add chopped onions and saute until softened. Now add chopped ginger, garlic. Saute again for a minute or two and then add slightly mashed potatoes. Mix well!
- Add the boiled veggies. Mix well! Add half chopped capsicum, and salt to taste. Saute for 2 to 3mins till capsicum softens.
- Now with the help of a masher, mash all the vegetables.(you can choose to mash it completely or leave it half mashed, here I have kept it a bit coarse. We like the bite of the vegetables in our pav bhaji.) - Add water and let it simmer for sometime.
- Add more butter, crushed kasuri methi and finely chopped spring onion greens. Mix well!
- Now take one or two cheese slices and place it at the centre. Cover the lid and let the bhaji simmer for a minute in low flame. Open the lid and mix the cheese with the bhaji. Our bhaji fondu is ready!!
- Pav Sticks~ - Take pav and cut it in four halves.Heat oil and butter on a grill pan. Slighty toast the pavs. Put them on skewers.
- Now put bhaji on a fondue bowl or on any ceramic bowl. Decorate it with cheese.
- Now heat a piece of coal. Place the bhaji and pav sticks on a low rack grill. Pour butter or ghee on the burning hot coal and place the rack on top.
- Quickly cover it with a cloche or a big vessel to trap and infuse the smoky flavour. - Serve hot!
