The ingredients needed to make Spanish Paella:
  1. Take 90 ml Extra virgin olive Oil
  2. Prepare 300 g spicy Chorizo
  3. Get 2 red Onion, diced
  4. Take 2 Bell Pepper, diced
  5. Prepare 6 Garlic Cloves
  6. Make ready 400 g whole peeled Tomatoes in tomato juice
  7. Make ready 2 Leaf Bay
  8. Make ready 10 ml Paprika
  9. Make ready 2 pinches Saffron Threads
  10. Get Salt and pepper
  11. Get 90 ml White Wine
  12. Get 20 ml dried Parsley
  13. Get 750 ml Brown Rice
  14. Take 2000 ml Chicken Broth
  15. Prepare 400 g blached Prawn meat
  16. Get 450 g half shell Mussels
  17. Prepare 400 g Calamari Rings
  18. Prepare 250 g frozen Peas
  19. Get 10 ml Italian Herbs for garnish
  20. Get Lemons for garnish

This is one of my all time favorite dishes. I've been experimenting for a year now and I think I've finally got it perfect. For a smaller pan and stovetop cooking half the recipe. Note: Some purists say an 'authentic' paella doesn't mix meat and seafood.

Steps to make Spanish Paella:
  1. Add olive oil to a skillet over medium heat. Slice the Chorizo in 10 mm thick discs. Brown the sausage in hot oil and set aside.
  2. Add the onion, bell peppers and garlic and cook until onion is translucent. Add tomato, bay leaf, paprika, saffron, salt and pepper. Stir and cook for 5 minutes. Add white wine and cook for 10 minutes. Taste and add salt if needed.
  3. Add back the Chorizo, 20 ml parsley and rice to the pot. Cook for 1 minute.
  4. Pour 1 750 ml broth slowly all around the pan and stir through the rice into an even layer. Bring mixture to a boil. Reduce heat to medium low.
  5. Cook for about 15-18 minutes (uncovered), then nestle the shrimp, mussels and calamari into the mixture, sprinkle peas on top and continue to cook (without stirring) for about 5 more minutes. Watch for most of the liquid to be absorbed and the rice at the top nearly tender. If for some reason your rice is still not cooked, add more broth and continue cooking.
  6. Remove pan from heat and cover pan with a lid. Allow to rest for 10 minutes. Garnish with fresh parsley and lemon slices. Serve.
