- Immediately remove from the oven once done & let it rest at room temperature for 15min.
Remove the pork belly from the oven and crack the salt crust, then remove all the salt from the pork skin. Remove from oven and let it cool slightly. Resist temptation to finish it all in one go. Use a paper towel to wipe off all the salt and thoroughly dry the pork belly skin. The crispy skin of the roasted pork belly is complemented well with layers of succulent fats rendered to perfection, alternating with juicy tender lean meat.
